													The fifth primary taste

												Today, Umami is considered the fifth primary taste.
In 1908, Kikunae Ikeda discovered that the chemical flavour in meat and seaweed consisted of glutamate. He called this taste “delicious/fresh taste”, in Japanese umami.
<br /><br />
Umami functions as an enhancer, bringing out several other tastes.
But in spite of the fact that we are able to experience a wide variety of flavours, our palate consists only of five primary tastes: sweet, salty, bitter, sour – and umami.
